Recipe for Basque cake with vanilla cream

Among the Basque culinary treasures is a dessert that leaves no one indifferent: the famous Basque cake.
It's a speciality that you'll have the chance to discover during a stay in our guest house in the Basque Country. While we're waiting to meet up with you during your stay, we'd like to share with you our gourmet secret, cooked with love at Iputxainia !
INGREDIENTS FOR 6-8 PEOPLE :
Basque cake dough
- 200g sugar
- 300g flour
- 200g butter
- 1 egg
- 2 egg yolks
- 1 pinch of salt
- 1/2 vanilla pod
Pastry cream
- 1/2 litre of milk
- 3 eggs
- 100g confectioners'
- 50g cornflour
- 1/2 vanilla pod
- 10g sugar
- Mix of spirits (white rum, yellow Izarra)
Prepare the Basque cake dough: place the butter, flour, sugar, salt and eggs in a bowl. Mix the mixture and add the vanilla seeds (1/2 pod). Refrigerate for a few minutes.
Prepare the pastry cream: whisk the eggs with the sugar, then add the cornflour. Gradually pour the boiling vanilla milk and whisk to combine. Return the mixture to the pan and cook for a few minutes. Leave to cool and add the mix of spirits to the pastry cream.
Roll out the pastry in a tin using baking paper, then add the cream to the centre of the pastry. Cover with another layer of pastry to enclose the cream.
Brush with water and confectioners' sugar to obtain a colour.
Bake in the oven for 30 minutes at 180-200°C.
Serve warm or cold with a little whipped cream.
